Pancakes

Pancakes are the best breakfast food. Lol .These pancakes are what happen when you have a midnight craving. My mom and I really wanted to eat pancakes.

 I just used pre-made batter. I added eggs and water as directed. ( i do make my own batter sometimes) At first, the batter was way too thick so i added a little more liquid. Also, it made the pancakes look a lot better.

 Once the pan was coated with oil and heated, it was ready for batter. Wait for the bubbles, then flip over and cook until brown.

Usually, pancakes are done when they are brown and cooked through. These aren't the best looking but they taste great! I love pancakes. You can add any filling you like! Blueberries, raspberries, bananas, chocolate chips- all is yummy.  I particularly like using fresh strawberries and maple syrup that is locally sourced. The only downside is that fresh strawberries/blueberries are only available at certain times of the year. They are worth the cost though. In addition to the great taste, you are supporting local farmers.

Halloween



                Halloween is a hard time to be a Celiac, especially you are allergic to peanuts or other products.  More often I see candy with peanuts and wheat as opposed to less.  When I was child I received peanut free chocolate and candy. This Halloween when my youngest brother went out the ratio of peanut filled candy was quite a bit higher.  It is has made me wonder- is the awareness of allergy lower
  
Or is it more perverse? A problem that stalks into society and stems into social issues like bullying-  the idea that  ‘my child is entitled to eat whatever they want, including peanuts because they like them?’
Now what you do in your own home is fine- i guess you should include the option of ‘safe’ candy- although that is a moot pot with the problem of GMOs . I don’t know but i do know that society needs to redefine empathy and understanding and move away from framing different perception in a negative manner- like the breastfeeding and formula feeding debate.

In the case of food allergies and intolerances parents and children need vigilance. It is hard because you cannot always check the label. The new labelling laws are helpful- definitely- but you do not always get the package the candy came in.  A lot of candy is individually wrapped. It is even more difficult when you call and the company doesn’t know whether they are safe or not. Companies should know this information.  Thankfully some websites exist that post information about what candy contains and if it is manufactured on the same lines as wheat and other allergy containing ingredients. This is a small step in the right direction to ensure the safety of our children and others.

Also, there is gluten free candy available now. Companies such as Enjoy Life produce chocolate bars that are free of the most common forms of allergens, a great relief to parents.

Quinoa

Quinoa! I love quinoa. When i first tasted it, I wasn't sure how i would feel. However after time and practice cooking the ancient grain, I have figured out why it is bitter.Rinsing quinoa improves the taste and takes aways the bitterness.
Quinoa is  a high quality food.
It also can be used as a baby cereal.  Therefore , it is great for infants who hould stay away from wheat and gluten.
My favourite way to use quinoa is as hot cereal with brown sugar and cinammon. IT tastes so good. It also nice waking up to a hot breakfast on a cold morning. It is great for me too as i am still breastfeeding. I can also share with my little one (without the sugar and cinnamon of course0
My little guy does not mind it all at but i think he prefers rice cereal right now.  He likes to try new foods. But his favourite is sweet potato and rice cereal and banana. I am so excited to embark on this gluten free, eco friendly lifestyle with my little man.  As I write this, my little guy has decided he wants a drink.  ''

More and more qunioa is available everywhere.Here is how you first cook quinoa. I recommend rinsing even if the package says pre -rinsed.
1) bring 2 cups of water to  boil. Add salt if desired.
2) add1 cup of quinoa, bring to boil, stir,  low heat, s, stir simmer 20 minutes
3) drain quiona and it s ready to enjoy

You can use it stir fries, as hot cereal, in soup. the list is endless.
